Strawberry Cream Cheese Pie

Serves: 8

   1/2 cup semisweet chocolate chips
   1/2 (10-ounce) package 9-inch baked pie crusts
   1 (8-ounce) package cream cheese
   1/3 cup whipping cream
   3 tablespoons agave
   1 tablespoon Mexican vanilla
   1/8 teaspoon salt
   1 1/2 pints fresh strawberries, washed and hulled
   2 tablespoons agave
   1/2 cup red currant jelly

Strawberry Cream Cheese Pie is from the Cook'n with Agave collection.

Spread melted chocolate over the bottom of the pie shell. Chill. Beat cream cheese with whipping cream, 3 tablespoons agave, vanilla and salt. Spoon over chocolate. Chill for 30 minutes. Combine strawberries with 2 tablespoons agave and melted jelly. Toss to coat evenly. Arrange over cream cheese filling. Refrigerate and try to hold of eating for another 2-3 hours.
