Brown Rice Pudding

Serves: 6

   1 2/3 cups water
   2/3 cup brown rice
   2 large eggs
   1/3 cup agave
   1/4 teaspoon salt
   3/4 cup milk
   1 cup plain yogurt
   Nutmeg or cinnamon

Brown Rice Pudding is from the Cook'n with Agave collection.

In medium saucepan, bring water to a boil. Stir in rice. Cover. Reduce heat and simmer until rice is tender (about 35 minutes). Beat together eggs, agave, salt and milk. Stir in yogurt and hot rice. Pour into 1-quart baking dish. Sprinkle with nutmeg or cinnamon. Set dish in pan of hot water. Bake at 350F, 50 to 60 minutes or until barely set. Cool. Top each serving with desired accompaniments.
