Agave Banana Bread

   1/2 cup agave
   1/3 cup margarine
   1 teaspoon vanilla extract
   2 eggs
   3/4 cup whole wheat flour
   1/2 cup unbleached flour
   1/2 cup rolled oats
   1 teaspoon baking powder
   1 teaspoon nutmeg
   1/2 teaspoon salt
   1 cup ripe bananas, mashed
   1/2 cup walnuts, chopped

Agave Banana Bread is from the Cook'n with Agave collection.

Cream agave and margarine in large mixing bowl until fluffy. Beat in vanilla. Add eggs one at a time, beating well after each addition. Combine dry ingredients. Add alternately with bananas, blending well. Stir in walnuts. Spoon into greased 9 x 5 x 3-inch loaf pan. Bake at 325F for 50 to 55 minutes or until wooden pick inserted near center of loaf comes out clean. Cool completely before slicing.
